It all started when I discovered a jar of Juniper Berries in my spice cabinet. A local grocery had gone out of business and everything was 50% off. Perfect time to stock up on spices. I threw the berries in the cart without a thought of what I'd do with them.
Finally, last Sunday I decided to make Juniper Syrup. Juniper being the ingredient that gives gin its flavor, I thought I'd pair the two in a cucumber cooler. That was a great thought but alas I had forgotten to pick up tonic water. So I decided to get more creative.
Digging further into my spice cabinet I discovered a jar of coriander seeds. Hmmm, I thought, Cilantro and cucumbers pair well...coriander is basically cilantro seeds...let's do it!
And that is how the Cucumber Cori was born.
It's currently 30 degrees and there's snow all around, but sipping this cocktail makes me think of summer. Hubby said it reminded him of his mom's cucumber salad. We both longed for long summer days on his parents deck enjoying the sun, perhaps with this drink in hand.
Alas, summer is a ways away. But that didn't stop us from enjoying a Cucumber Cori or two (or three).
The recipe is a work in progress. Think next time I'll juice some cucumbers and see where we go from there.
1 tbsp Crushed Coriander Seeds
1 oz. Juniper Syrup
1/2 Lime - juiced
2 oz. Gin
