Is there anything more reminiscent of childhood than a Peanut Butter & Jelly sandwich?
I loved that sweet and sticky goodness betwixt two pillows of fresh white bread. I'd eat the edges off first because Mom refused to cut them. She didn't buy that bread just to throw part of it away. I'd delay gratification and eat along the outside until all that was left was that perfect pocket of ooey gooey Peanut Butter and Grape Jelly (always grape!). This was the beginning of my pursuit for the perfect bite.
I'm all grown up now and can't think of the last time I had a PB+J sandwich. I came home one night craving my childhood snack but alas we were out of bread. Having already gotten comfy in my favorite jammies (penguins with Christmas trees) I wasn't about to venture out. So why not turn my craving into a cocktail.
Peanut Butter Syrup
2 parts water
2 parts sugar
1 part peanut butter
On medium heat, simmer and stir for 5 to 10 minutes.
Allow to cool. Strain using a mesh strainer 2-3 times.
Refrigerate for 1 week. Some separation may occur. Simply shake.
PB&J Gin Fizz
A variation on the Ramos Gin Fizz with childhood favs Peanut Butter and Jelly.
- 1.5 oz Dry Gin
- .75 oz Heavy Whipping Cream
- .50 oz Lime Juice
- .50 oz Peanut Butter Syrup
- 1 tsp Grape Jelly
- 1 egg white
Combine ingredients in shaker. Dry shake. And ice. Shake vigorously. Strain into Collins glass. Add club soda to fill.
If you are a Peanut Butter fiend, then you'll love this syrup. Use it as an ice cream topping. You won't be disappointed.
