I've been fascinated with making design with cocktail bitters for a very long time. Awhile back I saw a bartender spay his bar's logo onto a foamy egg white drink. Ever since then I've been fascinated with the idea of creating my own bitters designs.
I purchased a fancy gourmet olive oil sprayer just like his. It failed. Failed horribly. Half the time it didn't spray. The other half it sprayed bitters all over the place, staining my counter tops. So I gave up on it and switched to a simple spray bottle.
I decided on a basic drink recipe that used egg whites, the Pisco Sour (may fav).
1.5 oz Pisco
.75 oz Lemon Juice
.5 Simple Syrup
1 egg white
Second I found a stencil template on-line and, using a stencil cutter, created my stencil.
Once my stencils were cut, I made my cocktail, took a deep breath and crossed my fingers. Below are my two favorites.
Since it is Father's Day, I made a DAD stencil.
While the designs I recently made were better, it's still not easy. I've found a light spray from 6 to 10 inches above the glass worked well.
I plan to keep practicing. I have a lot of design ideas in my head.
