Tomato Peppercorn Shrub

This winter has been brutal for me physically. My butt has met the cold wet concrete more times than I care to admit. Ice, outside of a glass, is not my friend.

I’m longing for the sunny embrace of warmer weather, but I’m still loving the flavors of winter. Mainly I’m loving all the whiskey cocktails winter has to bring. So why not make a cocktail that inspires both.

I’ve been eating healthy lately, dropped some weight – yay me. With that comes lots of veggies and lately I’m been craving tomatoes. For the past year I’ve been toying with the idea of making a tomato cocktail. It’s time to make that dream a reality.

The People’s Fruit

1 ½ oz. Rye Whiskey

1 oz. Pimms No. 1

½ oz. Tomato Peppercorn Shrub

¼ oz. Lemon Juice

3 Mint leaves

Shake. Double Strain. Enjoy.

Tomato Peppercorn Shrub

For every 4 ounces of Red Wine Vinegar add 4 ounces granulated sugar, 1/4 teaspoon peppercorn, and 12 cherry tomatoes cut in half.  Refrigerate. Shake daily. Taste daily.
