Cucumber Punch

About a year ago I got into juicing fruits and vegetables. I splurged and purchased a big fancy juicer. I loved it! Through juicing I've developed an appreciation for leafy greens, herbs and veggies, especially cucumbers. In one week I'd go through more than a dozen cucumbers.

Don't know why its taken me this long to make fresh juices for cocktails. It seems obvious now.

After my making my Cucumber Cori, I got the idea to use fresh cucumber juice in a punch. Originally a punch was made up of alcohol, sugar, water, lemon, and spice.

My first plan was to use Gin as the spirit. But when I found an empty bottle of Beefeater on my bar (thanks hubby) the plan had to change. I've never used Pisco in anything other than a Pisco Sour, until today.

Cucumber Punch

1.5 oz Cucumber Juice

1.5 oz Pisco

1 oz Simple Syrup

juice of 1/2 lemon

Handful of Cilantro leafs

Muddle cilantro, syrup, and lemon before building and shaking with ice.

I love how the flavors of cucumber and cilantro compliment each other so well. It is the first time I think I really appreciated the taste of Pisco. Definitely a drink I plan to keep in my repertoire.
